Chutneys

Basic Popu/Tempering
        this section is especially for newly married ladies who doesn't  implemented any cooking before marriage. (nothing to surprise, before marriage, even i didn't do any cooking. it was a question mark for me to put popu when we were newly married), thats why i'm writing this small post.
Ingredients :  Oil - 2 tbsp, Urad dal - 1 tbsp, Jeera - 1/2 tbsp, Mustard seeds - 1/2 tbsp, Red Chillies - 1, Curry leaves - few  (and a pinch of hing should be added for dal/sambar etc)
--> Take oil in a small pan and let it heat up. 
Add all the ingredients, let the urad dal turn golden brown and the mustard seeds splatter. that's it, you can add this popu to chutneys/dal/sambar(Take care while adding curry leaves, as the oil might scatter a little bit more, just stay at distance.)


Split Dalia Chutney
      Very easy. Add 4 chopped green chillies into the mixer jar; Add split dalia and required salt. Pour sufficient water and blend them altogether. Add popu (check Basic popu at the top of this post).


Ginger-Tamarind Chutney
Ingredients :
Ginger : lemon size, Tamarind : orange size, Jaggery/Brown Sugar : lemon size, green chillies : 6 cnt, corriander seeds : 1 tbsp, Cumins : 1 tbsp.
Soak tamarind in small amount of water atleast 30 mins. I prefer wet tamarind than regular tamarind.
Take 2 tbsp oil in a small pan, and roast all ingredients except tamarind and jaggery. Let the ingredients cool down.
Now, add the soaked tamarind, roasted ingredients, jaggery and salt to mixer jar and blend them altogether.
Put tempering, as you did for the split dalia chutney.

Peanut Chutney
Peanuts : 1 cup, green chillies 4 cnt, corriander seeds : 1 tbsp, cumins:1 tbsp
roast all of them, let them cool down;
Add them to the mixer, add some salt, sufficient water, and blend them altogether.
Now put tempering and serve it fresh.

Mixed Vegetable Chutney
Required Ingredients :
Green chillies - 4 thai, Green Bell Pepper - 1, Bottle guard - 1/2 medium, Singua(Ridge Guard) - 1 small,
egg plant - 1,  tomatoes - 2 medium, Salt - to taste
--> Take 5 tbsp of oil in a small pan;
--> Saute all the ingredients and let them cool down.
--> Add salt and blend them coarse/smooth to ur interest.
--> Add popu to the blended chutney.
that's it, taste bhi, health bhi :-)
