My new post after quite a long time! Quick, easy and handy ingredients. Hope you all would like it.
2 eggs 🥚🥚room temperature
2 medium apples 🍎🍎(peeled and chopped into chunks) and any other fruit (i used blueberries)
1/4th cup sugar + 1 tsp
3/4th C pancake mix 🥞
Butter to grease 🧈
Mix eggs with 1/4th C sugar.
Whip eggs with stand mixer(about 10-12 mins) or electric mixer until ribbon stage (when u drizzle batter up and down, it should appear like a ribbon or flat noodle shape) or until color turns almost white.
Carefully fold in the pancake mix in batches.
Grease butter inside ur baking pan.
Pour batter into the pan and spread chopped apple pieces and blueberries in spacial manner.
Sprinkle about a tsp of sugar on the top for crispness and the color.
Bake at 350F for 22-27 mins until middle part is firm and top turns golden color.
Do the fork test; if it comes out clean, ur cake is ready.
Decorate with ur fav toppings and enjoy.
